Roasted Butternut Squash Soup


It's not really a "summer" soup, but it sounded so good I had to try it. I love Isa Moskowitz's special secret butternut squash tip...I'll let you read the book (Vegan with a Vengeance). I have some special squash tips myself - I've always just cut up the squash and roasted, boiled or steamed squash with the skin on. I just scoop the cooked squash out of the skin, wearing rubber gloves if it's hot, before I eat the squash. Some people I know eat squash, skin and all. And, the seeds are good roasted and salted too. If the squash is difficult to cut in half, I poke a couple holes in it, pop it in the micro for a couple minutes until soft, and cut it in half (watch for hot spots).

Anyway, the soup turned out wonderful, even without the spicy chile. The roasted butternut squash is added to a puree of fresh ginger, garlic, and onions (one of my favorite kinds of soup). My toddler has added "soup" to his list of first words after this soup!

So I am sorry for snooping on your site but I was googling menu ideas for the highly allergic and it took me to your blog. You seem to have a lot of experience with allergies and though I don't know your full story I was wondering if you had any suggestions...or encouragement. My sister and brother in laws daughter (aka my niece) is allergic to many things. Previously her highest allergens were eggs, dairy, gluten, they thought maybe chicken since my sister in law is allergic but weren't sure, soy, peanuts, many grasses outside, dogs...basically her diet consisted of fruits and veggies, rice milk, and the only starches she could have were things that contained rice, and then pork, and beef mostly. Well they just got allergy testing done again and now she is allergic to pork, beef, chicken, strawberries, and tomatoes. It's so frustrating for them cause its like what can she eat!! Their allergist doesn't really know what to do with her cause he has never experienced a case as difficult as hers. I didn't know of steps you had taken along the journey...menu websites...anything of encouragement that I could pass along to them would be great. Please email me at the_bridge83@hotmail.com
